The Palaces dining options include Gilt, a dinner-only restaurant with two Michelin stars led by executive chef Justin Bogle. Innovative American cuisine, an extensive wine cellar and Gilts mosaic tiled floors are part of what make this a standout New York restaurant. The more casual Istana brasserie serves seasonally inspired dishes for breakfast, lunch and dinner. The newest addition, an outdoor courtyard lounge called The Palace Gate, serves classic and unique cocktails along with an eclectic menu. In-room and private dining are also offered. The Palace caters to health-minded guests with a 7,000-square-foot fitness center that overlooks St. Patricks Cathedral. The gym is stocked with modern machines and yoga equipment and offers personal training sessions and complimentary workout clothing for guests to use during their stay. An on-site spa, open daily until 9 p.m., helps guests unwind from the hectic city with a lengthy menu of services, including massages, European hydrating facials, reflexology and detoxifying seaweed treatments.
